After passing through the sorting table and destemming, the best bunches were chilled to 10°C for subsequent maceration for 10 hours. After this time, they were gently pressed in an inert atmosphere to prevent any oxidation. Following settling, the clear must fermented at 15°C. In this vintage, malolactic fermentation was carried out in 15% of the tanks.
