Manual harvesting by variety in 20 kg boxes with subsequent selection on tables upon entering the winery.

Fermentation of each variety separately at a controlled temperature in stainless steel tanks for 21 days.

After fermentation, the wine is aged on lees before the final blending, which, as with every vintage, seeks to maintain the original spirit of Santiago Ruiz.

Tasting Notes

On the nose it is intense, fresh and complex, combining fruity notes (apple, pear, apricots) with hints of aromatic herbs and minerals.

On the palate, it's complex, with a sweet, full-bodied entrance and predominant citrus notes. The combination of the five native varieties gives it extraordinary complexity.

It will evolve very positively in the bottle in the coming months.
