Ingredients for 6 people:
- 1 can of squid in its ink
- 70 gr. of onion
- 2 cloves of garlic
- 300 gr. Round or bomb rice
- 800 gr. of fish stock
- 60 gr. of white wine
- A sprig of fresh parsley, chopped a little more
- A pinch of food coloring
- Extra virgin olive oil
- Salt
- Ground pepper
Place the onion, garlic, sprig of parsley, and olive oil in the Thermomix mixing bowl. Chop for 2 seconds/speed 5 and sauté for 5 minutes/120°C/speed 1. Add the squid with its ink and wine. Set for 1 minute/Varoma/speed 1, without placing the measuring cup to allow the alcohol to evaporate. Add the rice, salt, pepper, and food coloring. Set for 2 minutes/100°C/Slow Mix/speed 1. Pour in the stock and set for 13 minutes/100°C/Slow Mix/speed 1. Pour the rice into a serving dish and spread it out with a spatula. Sprinkle with chopped parsley and mix.
