Why gordal

The gordal is the largest olive on the market, with the firmest, meatiest flesh. Compared with the manzanilla, which is smaller and stronger in flavor, the gordal offers a substantial bite and a milder touch, making it the best candidate for a dressing with character: it stands up to the spices without being masked by them.

Cured in brine before dressing

The olives are first cured in brine, which is what sets their texture and aroma. Only then are they dressed. Skipping or shortening that step is what produces soft or flat-tasting olives, and it is the least visible and most important difference between an ordinary olive and a good one.

How to serve them

At room temperature, drained or with a little of their own dressing. With a vermouth, a small draft beer or a fino. They also work very well alongside a board of canned seafood: their acidity cleanses the palate between bites of fish in oil.
