Description
The Caíño grape used to make it is cold-mapped for a longer period to take advantage of its high percentage of skin, thus favoring the extraction of its subtle aromas.
After alcoholic fermentation, we keep the wine in contact with its lees for just under two months. It then rests at a low temperature for at least another six months before being bottled, where it finishes maturing for a quiet two years.
TASTING COMMENTS
This 2015 vintage stands out for its appreciable aromatic intensity of ripe tropical fruit. The aromas are fresh, clean, and resounding.
On a higher level, we appreciate aromas of ripe peach and the tropical character of pineapple and mango. This initial impression is followed by aromas of mandarin, orange, and a faint floral note. Thanks to Caiño's ability to extract the best characteristics of the terroir, La Mar displays a notable minerality, with earthy notes both on the nose and at retronasal level. On the next aromatic level, the wine surprises us with elegant saline notes that envelop its interesting aromatic profile.
The palate is surprising; its high glycerol content and its high extract fill the mouth with pleasurable sensations. It is an unctuous, fleshy wine with great structure and body, yet tender, lively, enveloping, and fresh, with excellent acidity that gives it freshness and length, while also facilitating perfect aging.
