A sparkling wine that isn't Cava

Cava is made with Macabeo, Xarel·lo, and Parellada; Champagne with Chardonnay and Pinot. This sparkling wine starts with Albariño, the Atlantic grape of Rías Baixas, and that completely changes its profile: the characteristic salinity and citrus notes of Albariño appear, instead of the more neutral, apple-like profile of young Cava.

What Brut Nature means

It is the driest category of sparkling wines: no added sugar in the dosage. All the flavor comes from the grape and the aging, with no sweetness to round it out. It is the most honest version of a sparkling wine and the one that best reveals the raw material.

How to serve it

Between 6 and 8 °C, in a white wine glass rather than a flute, so the aroma can open up. It pairs with seafood, oysters, raw fish, and savory appetizers.
