The original 19th-century method: Hazas anchovies in spicy butter
Cantabrian canned anchovies were born with the Italians who travelled here in the 19th century to buy anchovies and salt them. It is said that, given their strong flavour, they preserved them in butter to make them gentler on the palate. When you choose Hazas anchovies in spicy butter you are not trying a fad: you are reviving the original method, with a contemporary twist.
A collaboration with the Gunea restaurant
This collection is the result of joint work between Anchoas Hazas and Pablo and Begoña of the acclaimed Gunea restaurant in Avilés. They make the butter emulsion, and here they season it with dried chilli.
And on top, chilli
The dried chilli powder rides on the fat of the butter, which carries it and spreads it out instead of arriving dry and direct. The result is an enveloping heat that appears after the bite, not before. Three layers of flavour: the saltiness of the cured anchovy, the milky sweetness of the butter and the warmth of the chilli at the end.
52% anchovy
More than half of the contents is fish. This is not an anchovy-flavoured spread: these are whole fillets wrapped in butter.
Made in Lastres
This Asturian boutique cannery works with Cantabrian anchovies caught during the spring season, when their fat content is at its lowest, cured in salt for one to two years and cleaned by the painstaking hand process known as "sobado", with no industrial scalding.
How to serve them
On toasted bread, letting the butter soften slightly with the warmth of the bread. They need nothing else: no oil, no tomato, no dressing. With a cold beer or a dry white wine.
Storage: refrigerated product
Because it contains butter, this tin travels and is stored chilled. Always keep it in the fridge and take it out about fifteen minutes before eating: when cold, the butter hardens and the flavours close up.
