Elaboration:

-Harvest in boxes. Destemming and crushing. Cold pre-fermentation maceration. Pressing in a low-pressure pneumatic press.

-Static cold settling at 8º C. Alcoholic fermentation in stainless steel tanks at a controlled temperature of 16º-18º C.

-Storage of the wine on its fine lees until clarification, stabilization, filtration, and bottling. Clarification, cold stabilization, filtration, and bottling.

-Bottle aging for at least 2 months in the cellar.

Tasting :

Golden yellow with greenish tones. Intense and complex aromas of stone fruit (peach) and citrus (grapefruit), with vegetal nuances (fennel) and a finish of white flowers.

-Powerful and fresh taste, with great length and aromatic persistence of great intensity and complexity.

Evolution:

The wine develops excellently in the bottle, developing more complex tones, with aromas of kerosene, honey, bitter orange peel, and dried fruit emerging, with a fresh palate full of aromatic sensations.
