Albacore | The finest tuna of the Cantabrian Sea
The finest tuna of the Cantabrian Sea in our albacore collection
Albacore, known in Spain as bonito del norte (Thunnus alalunga), stands out for its firm, white flesh and delicate flavour, with all the character of the best fishing tradition. It is the highest-quality raw material among canned tunas, and also the most expensive: it is caught during the summer season, when it moves up the Cantabrian Sea and reaches its ideal fat content. Here you will find it as loins, flakes and fillets, in olive oil, natural or in escabeche.
Looking for ventresca?
Ventresca is the belly of the fish, the part with the most fat marbling and the scarcest cut of all: it breaks into soft, almost buttery flakes. If that is the cut you are after, you will find it all in our albacore ventresca collection. And if you prefer the tuna version, more intense and deeper in colour, take a look at our tuna ventresca.
Albacore or tuna
They are different species, although they are often confused. Albacore has whiter flesh and a finer flavour; yellowfin tuna is firmer and stronger. If you are looking for something heartier or more affordable, browse our canned tuna collection.
Before serving
Serve at room temperature, never straight from the fridge. With a seasonal tomato, some roasted peppers or simply with bread. And don't throw away the oil: it's the dressing.
Add your favourite tins to the basket and receive them in 24-48 hours.
