The original nineteenth-century method
Cantabrian anchovy preserving began with the Italians who travelled here in the nineteenth century to buy bocarte and salt it. And it is said that, given its strong flavour, they kept it in butter to make it easier on the palate. These anchovies are not a passing trend: they recover that original method, with a contemporary twist.
A collaboration with Gunea restaurant
This collection comes out of the joint work between Anchoas Hazas and Pablo and Begoña, of the celebrated Gunea restaurant in Avilés. They make the butter emulsion, here scented with lemon and lime zest.
Why citrus works with anchovy
Cured anchovy is saline and deep; butter brings dairy fat that rounds it off. But fat on fat can turn heavy, and that is where the citrus comes in: lemon and lime zest lift the whole thing, cut the richness and leave a fresh finish. It is the same gesture as squeezing lemon over fish, built into the preserve itself.
52% anchovy
More than half the contents is fish, with 8 to 10 fillets per tin. This is not a spread that tastes of anchovy: these are whole fillets wrapped in butter.
Spring bocarte, cured for one to two years
This house works only with Cantabrian bocarte caught in spring, when its fat levels are at their lowest and its spawning phase gives the flavour, aroma and texture that set the product apart. Curing runs for one to two years.
How to serve
On toast, letting the butter soften with the warmth of the bread. Nothing else is needed: the lemon is already inside. With a dry sparkling wine, a txakoli or a crisp white.
Chilled product
Because it contains butter, this preserve ships and is stored cold. Always keep it refrigerated and take it out about fifteen minutes before serving: cold butter hardens and the citrus aromas close up.
